Hearing (I could still read and get online without learning a new language) Leg (Artificial legs technology is better thean artificial hand technology) One eye (I have no depth perception anyway and eye patches would be yet another accessory. As would an artificial eye. But if you take away my voice, god, I'd lose my sanity)
Heh. Thanks to those who explained their answers. Now I know why teachers specify that. ;)
My answers:
I'd rather lose my hearing. Music isn't terribly important to me, to be honest; about the only thing I'd really miss would be the sounds of forests and the ocean. But if I lost my sight, I wouldn't be able to read, and that would be death. When I was a kid, the only punishment that worked well was to forbid me pleasure reading.
I'm not sure of the limb question, but if forced to choose, I'd rather lose my left arm than a leg. I'm not really sure why.
One eye. Preferably the left. The inability to communicate vocally would irritate me eventually.
Hearing, because while I do enjoy music I enjoy the visual pleasures more. I love to read. And my recent interest in photography would be pretty much killed if I couldn't see what the hell I'm taking a picture of.
A leg, because I feel I could get along without one leg more easilly than I could without one arm.
My voice, because it would not only force me to only "say" things that are important enough to take the effort to write them down, but also it would force people to take the time to read and pay more attention to what I'm "saying" when I did. And besides, my vision is bad enough as it is, I can barely get by with the use of both my eyes -- having only one left might as well make me blind.
Hearing. I'd also miss certain sounds, but my sight is precious to me enough already, don't want to lose it all.
My left leg, because you really only need one leg to drive with. Also you can buy a prosthetic leg that works way better than the "Claw." Well, unless you're choosing who should stay and who should go, but then you'll get a god complex, or have the one you already have fully develop. Either way, you'd have to be taken down because we enjoy preserving the status quo.
My left eye. Hell, it's already fucked up enough, so who needs it? I mean, someone would come up to me an say, "Matt, your eye is fucked up." Actually, I'd just want an ocular cavity and a collection of keen glass eyes like the villain in Last Action Hero. I'd like to order multiple bomb eyes please. Can I get a discount for a large batch?
I'm finding a lot of people are presuming more than the question asked.
He asked "An arm or a leg", which does not in any way imply you get to CHOOSE which arm, or which leg -- just you get to choose the arm/leg part of it.
Same thing for the whole "One eye" thing. Nowhere does it say you get to specify _which_ eye. Assume the person doing the removing of the eye (arm, leg, whatever) will have the freedom to choose either.
My standing rule for these kinds of questions is that you assume anything you have to to make the question one you can answer. The idea is to see how people think, which is why I ask them to explain their assumptions, usually.

A leg.
Voice.

left arm... or a leg
one eye
I really do not think I could cope with losing a limb though... It's always been a fear, but losing my mind slowly has always been my greatest fear.

A leg. Easier to pilot a wheelchair than operate a claw.
One eye. Kill my ability to sing and you may as well kill me.

At least, that's the way I saw the questions.

Oh shit
Arm.
Eye.
Of course, for me, the first and last are quite the same.
